How to make it

  • Heat oil in a large skillet or wok to high. Coat the shrimp with the corn starch lightly. When the oil is hot, add the shrimp and cook until golden brown. Set aside.
  • Drain most of the oil, leaving just a little and heat on high. Add the garlic. Stir fry for a minute then add the onions. Add the jalapenos and spring onions to the pan and cook for a few minutes. Add the shrimp back to the pan with the seasoning.
  • Stir everything together. Check for seasoning, add any if required.
  • Serve hot!
