How to make it

  • - Season chicken pieces. Over a high heat melt butter with a splash of olive oil, brown chicken in batches and set aside.
  • - Drop to a medium temp and saute leek and garlic. When nearly cooked through add mushrooms and continue to saute.
  • - Bring the heat back up to high, return chicken to pot, add beer. Bring to a simmer, put lid onto the pot and drop to a medium-low temp, allow to simmer for 40 mins.
  • - Check if chicken is cooked through, if so remove from pot and set aside.
  • - Bring heat back up to a high temp and add Silverbeet and Cream. Continue to stir till sauce is reduced by about half. Season to taste.
  • - Return Chicken to sauce and heat through.
