Chicken Braised In Beer With Mushrooms

- 1 leek sliced shopping list
- 1 whole chicken Jointed (about 1.6kgs) shopping list
- 2 Large cloves of garlic shopping list
- 200 grams Swiss mushrooms sliced shopping list
- 250 grams of Silverbeet (or roughly 4 leaves) chopped shopping list
- 50 grams of butter shopping list
- olive oil shopping list
- 1/2 cup Cream shopping list
- 1 Cup of a good Pale Ale shopping list
How to make it
- - Season chicken pieces. Over a high heat melt butter with a splash of olive oil, brown chicken in batches and set aside.
- - Drop to a medium temp and saute leek and garlic. When nearly cooked through add mushrooms and continue to saute.
- - Bring the heat back up to high, return chicken to pot, add beer. Bring to a simmer, put lid onto the pot and drop to a medium-low temp, allow to simmer for 40 mins.
- - Check if chicken is cooked through, if so remove from pot and set aside.
- - Bring heat back up to a high temp and add Silverbeet and Cream. Continue to stir till sauce is reduced by about half. Season to taste.
- - Return Chicken to sauce and heat through.
