How to make it

  • Crush crackers very fine; add melted butter and press into 9" x 13" glass baking pan. Bake at 400° for 10 minutes or until lightly browned.
  • Heat milk in saucepan. Blend eggs, sugar, cornstarch, and salt. When milk is hot, temper egg mixture with it before adding entire egg mixture to milk. Stir constantly until cooked through and thickened. Add vanilla. Pour over Ritz crust while both are still hot- it will prevent the crust from getting soggy. Cool with plastic wrap directly against vanilla custard to prevent skin from forming. Not all of the filling may be needed. You will want a 1/4" layer.
  • Make crumbles with powdered sugar, peanut butter, peanuts, and crackers. Sprinkle generously over vanilla layer.
  • KitchenAid works best for the French Silk. Whip butter; gradually add sugar until light and fluffy. Mix in cocoa and vanilla. Add two eggs and beat on high for five minutes. Scrape down sides of bowl, add two more eggs and beat five more minutes. Watch measurements and time carefully for this part or it will break down. Spoon on top of peanut butter crumbles.
  • Dip mini peanut butter ritz's in melted white chocolate and use for garnish. Thoroughly chill dessert and serve chilled.
