How to make it

  • Preheat oven to 425 degrees F
  • Grease 12 inch cast iron skillet, set aside.
  • In a large mixing bowl stir together cornmeal, flour, salt, and baking powder.
  • Make a well in the center of the dry mixture.
  • In a medium bowl combine eggs, milk and cooking oil.
  • Add the liquid mixture all at once to dry mixture.
  • Stir just till moistened (batter may be lumpy).
  • Pour batter into the prepared Skillet. Bake at 425 degrees F 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
