This is a very easy recipe, and always turns out just perfectly. Never any leftovers in my house. I use my rice cooker to prepare the rice before hand.

I added the beaten egg to the remaining 1/2 c of milk and when it was time to add the egg and the milk, I "tempered" the milk and eggs by spooning in a couple of tablespoons of the hot rice mixture, a little at a time, until the milk and eggs were warm. I did this to avoid scrambling the eggs when adding them to the hot mixture. I also added 1 packet of unflavored gelatin dissolved in 1/8 C of boiling water along with the egg and milk mixture. That way it was a little thicker when it set up. We thought it tasted great cold too. This is a great recipe!
