How to make it

  • With a chef's knife, cut straight down to the bone near the top of the drumstick. Turn 90 degrees, and make another slice down to the bone about a half centimetre(about the width of a thin cut fry) bellow the first cut. Repeat until you're out of meat.
  • Mix the thyme and rosemary with the butter and use said butter to butter the canals you just made.
  • Slice the garlic cloves, and place slices into the canals of meat. Dust with your favourite crushed bread crumbs/ crushed crackers.
  • Preheat the oven to 450.
  • In a pan on high heat sear the skin of the drumstick.
  • Put the drumstick into the oven, either in the pan if oven safe or on a tray with foil.
  • cook for 20 to 30 minutes.
  • Pull the drumstick out of the liquid.
  • Use franks to de glaze the pan into a tall glass, that is wide enough to accept the drumstick.
  • add the honey/maple syrup, and cranberry sauce, and mix well.
  • dunk the drumstick, and enjoy.
  • If you so desired you could also deep fry or bake after the cutting.

I would love to see a photo of this as I am having trouble visualizing what it would look like and how to make the cuts. Interesting recipe.
