- 2 tablespoons extra virgin olive oil shopping list
- 1/2 teaspoon kosher salt shopping list
- 3 cups seedless watermelon balls (or cubes) shopping list
- 6 cups baby arugula shopping list
- 1/4 cup toasted pine nuts shopping list
- Freshly ground pepper shopping list
How to make it
- Whisk together the lemon juice, vinegar and salt in a large bowl. Add the oil in a slow stream whisking until emulsified. Add the watermelon, arugula, and pine nuts; toss to coat. Season to taste with pepper.
