Oysters a La Poulette

- 1/2 c butter shopping list
- 3 Tbsp. flour shopping list
- 3 egg yolks shopping list
- 1 pint chicken (or veal) stock, boiling shopping list
- 1 Tbsp. lemon juice shopping list
- 1 tsp black pepper shopping list
- 1 tsp salt shopping list
- 2 dozen oysters shopping list
How to make it
- Beat the butter and flour together until smooth and white.
- Add salt, pepper and lemon juice.
- Gradually pour boiling stock on this mixture and simmer for ten minutes.
- Beat the yolks of eggs in a saucepan, gradually pouring the cooked sauce on them.
- Pour into a double boiler and stir for two minutes.
- Put oysters into this and cook until the edges curl.
- Serve HOT.
