Oysters A La Poulette Recipe
Simple oysters. I could say more but just make it and experience it for yourself.

Ingredients
  • 1/2 c butter
  • 3 Tbsp. flour
  • 3 egg yolks
  • 1 pint chicken (or veal) stock, boiling
  • 1 Tbsp. lemon juice
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 dozen oysters

Directions
  1. Beat the butter and flour together until smooth and white.
  2. Add salt, pepper and lemon juice.
  3. Gradually pour boiling stock on this mixture and simmer for ten minutes.
  4. Beat the yolks of eggs in a saucepan, gradually pouring the cooked sauce on them.
  5. Pour into a double boiler and stir for two minutes.
  6. Put oysters into this and cook until the edges curl.
  7. Serve HOT.
