Pistachio Cake

I found this great recipe in a small Taste of Home cook book, and since I love pistachios, I had to try it, only changed one ingredient and it is to die for so I had to share....I hope you Enjoy !!
Ingredients
- 1 pkg of yellow cake mix shopping list
- 1 pkg of instant pistachio pudding (3-4 oz) shopping list
- 4 eggs shopping list
- 1 cup club soda shopping list
- 1/2 cup of vegetable oil shopping list
- 1/2 cup of almonds chopped up coarsely shopping list
- icing shopping list
- 1 cup of cold heavy whipping cream shopping list
- 3/4 cup of cold 2% milk shopping list
- 1 pkg of pistachio instant pudding mix shopping list
- 2 tsp of confectioners sugar shopping list
- 1/2 cup of chopped almonds for garnish shopping list
How to make it
- Turn oven to 350*
- In a large bowl combine the first 5 ingredients
- beat on medium for 2 minutes
- and stir in almonds
- Pour into a greased fluted tube pan and bake for 40-45 min
- For the icing mix all ingredients and beat on high until peaks form, put in the refrigerator until cake is cooled and ready to frost.
