How to make it

  • Preheat oven to 220°C/425°F.
  • Wash fish and pat dry.
  • Combine oil, garlic and salt, stir well.
  • Make 3 deep slashes in each side of each fish.
  • Lay fish in shallow baking pan and rub oil mixture inside and out, including the slashes, pouring any left over into the pan.
  • Slice the lemon and place 1 slice inside each fish, scatter the rest about the pan.
  • Scatter all with parsley, reserving 1 TBS, and pepper.
  • Bake 15-20 minutes, watching carefully, until fish is just done-- do not overbake! Fish continues to cook in hot pan when taken out of the oven, so if in doubt, remove earlier rather than later.
  • Sprinkle the remaining parsley over the top and serve immediately.
  • I love this with buttered, parslied new potatoes and a green salad.
