I love my cowpoke beans cooked from scratch. But unexpected company showed and I needed a menu fast. So I dug into the hurricane food supply and came up with this quick dish.

Ingredients
  • 2 cans of pinto beans, drained and rinsed
  • 1 can of black beans, drained and rinsed
  • 4 slices of bacon, diced and fried
  • 5 cloves of garlic
  • 1 can of tomatoes and green chilies (mild)
  • 1 can of beer
  • 1 tbsp of chili powder
  • 1 tsp of cumin powder

Directions
  1. Drain and rinse beans.
  2. In a deep sauce pot, cook the bacon til crisp and render out all fat.
  3. Saute garlic in fat.
  4. Dump in beans, beer, tomatoes and seasonings.
  5. Cook over medium-low heat for 30 to 45 minutes to reduce the liquid and concentrate the flavors.
  6. ******Note, no onions in the recipe unlike the scratch recipe,
  7. my friends are extremely sensitive to onions and I adapted the heat level for them too*****

I like the sounbds of this.... would go good with any bbq..


NOTE: These were even good cold/on the way to room temp. The tomatoes and green chilies added enough heat to liven up the beans and the beer flavor was mellowed out completely. I was happy with the way the speedy version turned out. Thumbs up!
