Sausage And Cheese Breakfast Casserole

Found a recipe on the side of a package of Jimmy Dean's sausage roll and adapted it to our tastes. Made this for our "Breakfast" supper last night along with some home fries and grilled corn muffins. Can be made the night before and then throw it in the oven in the morning.
Ingredients
- 1 lb. Hot pork sausage (I used Jimmy Dean) shopping list
- 1/2 red bell pepper, chopped shopping list
- 5 cups bread, cubed shopping list
- 2 cups sharp cheddar cheese, shredded shopping list
- 10 eggs, beaten shopping list
- 2 cups milk shopping list
- 2 tsp. dry mustard shopping list
- 1 tsp. salt shopping list
- black pepper to taste shopping list
- 6 scallions, chopped shopping list
- Note....I thought about adding tomatoes and green chilies but didn't, will next time though. shopping list
How to make it
- Preheat oven to 325
- Using non stick spray, coat 9x13 baking dish
- In skillet, add red pepper and sausage
- Crumble meat and cook through
- Set aside
- In mixing bowl, combine eggs, mustard, milk, salt and pepper
- Set aside
- Add 1/2 bread cubes to bottom of baking dish
- Sprinkle with 1/2 of meat mixture
- Sprinkle 1/2 of cheese to top of meat
- Repeat layering with the rest of the bread, meat mixture and then cheese
- Pour egg mixture evenly over entire casserole
- Bake 60 minutes uncovered. (Tent with foil if top becomes too brown)
