Vegan Feijoada

- 800g/28.2oz cooked black beans (or the equivalent of two tins of beans) shopping list
- 400ml/14oz tomato passata + 200ml water shopping list
- 200g/7oz vegan hot dogs or smoked tofu shopping list
- 1 carrot shopping list
- 1 red pepper shopping list
- 1 onion shopping list
- 6 cloves of garlic shopping list
- 3 tbsp soya sauce shopping list
- 2 tbsp olive oil shopping list
- 2 bay leaves shopping list
- a handful of parsley or coriander shopping list
- 1/2 tsp oregano shopping list
- 1/4 tsp cumin seeds shopping list
- pinch of salt and sugar shopping list
How to make it
- 1. chop your carrot, onion and pepper. also peel the garlic and smash it with the side of a knife or bottom of a glass to release the flavour
- 2. add oil to a medium saucepan and when hot add all of the above
- 3. then add the oregano, cumin seeds, bay leaves and stir fry for a few minutes
- 4. add the soya sauce and proceed sautéing for a few more minutes
- 5. add the tomato juice and water, the chopped parsley or coriander
- 6. then add the cubed tofu/sliced hot dogs and the beans
- 7. cover with a lid and bring to a boil
- 8. then simmer for about 30/40 minutes until all the vegetables are soft
- 9. if you think there is too much liquid continue simmering until the sauce is nice and thick
- 10. adjust the salt and add a pinch of sugar to counteract the acid of the tomatoes
- 11. serve with plain white rice
