How to make it

  • 1. chop your carrot, onion and pepper. also peel the garlic and smash it with the side of a knife or bottom of a glass to release the flavour
  • 2. add oil to a medium saucepan and when hot add all of the above
  • 3. then add the oregano, cumin seeds, bay leaves and stir fry for a few minutes
  • 4. add the soya sauce and proceed sautéing for a few more minutes
  • 5. add the tomato juice and water, the chopped parsley or coriander
  • 6. then add the cubed tofu/sliced hot dogs and the beans
  • 7. cover with a lid and bring to a boil
  • 8. then simmer for about 30/40 minutes until all the vegetables are soft
  • 9. if you think there is too much liquid continue simmering until the sauce is nice and thick
  • 10. adjust the salt and add a pinch of sugar to counteract the acid of the tomatoes
  • 11. serve with plain white rice
