Easy Tomato Vegetable Soup

- 1 tall can tomato juice ( low sodium if preferred ) shopping list
- 1/2-1 cup chopped celery shopping list
- 1/2-1 cup chopped green beans shopping list
- 1 small onion diced shopping list
- 1 large red bell pepper diced shopping list
- 1/2 small zucchini diced shopping list
- 1/2 small yellow squash diced shopping list
- 2 cloves garlic minced shopping list
- 1/2-1 cup diced carrots shopping list
- 1/2-1 cup Minute or quick brown rice ( optional ) shopping list
- salt and fresh cracked black pepper to taste shopping list
- Optional: kernel corn, fresh chopped herbs like basil or oregano to taste shopping list
How to make it
- Stove top: place all in a soup pot adding vegetables for desired thickness of soup
- Bring to a boil, then simmer covered till vegetables are tender to taste
- Season as desired
- Serve hot or chilled
- Pressure cooker: Electric pressure cooker soup menu - approx 15 minutes to cook soup
- As above: season to taste and serve hot or chilled
