Lovely Light Summer Squash Soup

- 4 large yellow squash cut up shopping list
- 1 green bell pepper cut up shopping list
- 1 white onion cut up shopping list
- 2 cloves garlic peeled shopping list
- 1 cup celery cut up shopping list
- 4 cups water, chicken broth or vegetable broth shopping list
- 1 cup sour cream or yogurt shopping list
- 1 Tbs walnut oil ( or extra virgin olive oil ) shopping list
- 1 tsp curry powder or to taste shopping list
- 1 Tbs salt or to taste shopping list
- pepper top taste shopping list
- 1/2 tsp powdered corriander or to taste shopping list
- Garnish: chopped chives, chopped tortilla or nacho chips shopping list
How to make it
- Place all the vegetables except seasonings and oil and sour cream in a stockpot.
- Cover with the water
- Cook until vegetables are tender
- Cool and hand blend or put in a blender in batches to puree.
- Whisk in the sour cream
- Add seasonings to taste
- Garnish each bowl with crushed tortilla chips and chopped chives.
- Serve hot or chilled.
- Either way its quite fine.
