How to make it

  • Place all the vegetables except seasonings and oil and sour cream in a stockpot.
  • Cover with the water
  • Cook until vegetables are tender
  • Cool and hand blend or put in a blender in batches to puree.
  • Whisk in the sour cream
  • Add seasonings to taste
  • Garnish each bowl with crushed tortilla chips and chopped chives.
  • Serve hot or chilled.
  • Either way its quite fine.
