    Reading your recipe makes me smile.
    A clean gallon container...who would insist that one uses a down right dirty gallon container? :o)
    ~and~
    As for you grading curve...'B' Grade Syrup?
    Grading maple syrup is like that of wine...
    Some like the reds,others the whites,and some like the blush,and,so on,and,so on.
    Altho I strive for the 'A'
    ~and~
    No!
    Not the Scarlet 'A' :o)
    The 'B' has a hearty robust flavor.
