How to make it

  • This can be done in a stand mixer with dough hooks but I prefer to prepare this by hand
  • In a very large mixing bowl place the water, yeast, egg, honey, salt, curry powder and stir well
  • Gradually add a few cups of flour and mix with a wooden spoon
  • Keep adding enough more flour to form a dough that can no longer be mixed by the spoon but is soft and pliable and only slightly sticky
  • Now knead dough until smooth and elastic ( 5 + minutes ) by hand on a lightly floured surface
  • Form dough into a round
  • Place in a large oiled bowl and coat to turn dough
  • Cover bowl and let rise double in a warm place ( maybe an hour )
  • Gently deflate dough and divide into 3 pieces
  • Form each piece into a loaf ( oval, round etc.)
  • Place loaves on a baking sheet(s)
  • Let rise double, covered-about 45 minutes
  • Now brush loaves with beaten egg and sprinkle on some poppy seeds if desired
  • Make a 1/2 inch slash diagonally across loaf or your own design
  • Bake in a preheated 400F until dark golden brown and loaves are done- about 30 minutes or so
  • Cool loaves completely on rack
  • Serve warm or room temp- freeze uneaten loaves.
  • Note: time preparation does not include the kneading, rising, baking etc.
