Ginger Duck

- 1 duck 4 to 5 pounds shopping list
- 1 can schweppes ginger beer or seagrams ginger ale shopping list
- 2 shots Canton ginger liquer ( ginger brandy can be substituted) shopping list
- 1 inch piece fresh ginger shopping list
- 1 PACKAGE OF CHINESE instant ginger tea CRYSTALS with or with out honey (this is not real tea) shopping list
- 1 drip pan shopping list
- 1 spray bottle shopping list
How to make it
- poor out 1/2 the ginger beer , into your spray bottle
- add the CANTON liquer to the can
- also add the the ginger tea crystals to the can set can aside,
- peel piece of ginger and cut into thin wafer strips
- insert wafer strips underneath ducks skin with fingers
- in your sink slide duck cavity down on soda can
- place on 300 f grill ,away from heat for 4 to 5 hours...turning once, and place drip pan underneath to save precious duck fat for future use
- every 30 minutes spray duck with remaing soda
- should your duck skin start to burn tent duck in aluminum foil
- when removing duck from grill use fireplace gloves and when sliding can out donot burn yourself with scolding liquid
- serve with wild rice,and a roasted veggie salad of the season,hoisin sauce or other fruit sauce is nice accompaniment
