Easy Hot Artichoke & Jalapeno Cheese Dip With or Without Spinach

- 1 can of artichoke hearts, in water, drained quartered and diced into bite size pieces shopping list
- 1/2 - 1 can of roasted, diced jalapenos shopping list
- 1 8 oz. pkg. cream cheese, softened shopping list
- 4 oz. grated Parmesan cheese, extra for top shopping list
- 1 cup mayonnaise shopping list
- 1 box of chopped, well drained chopped spinach, if desired shopping list
How to make it
- Preheat oven to 350 degrees. Mix cream cheese with mayonnaise. Stir in Parmesan cheese, artichoke hearts and 1/2 - 1 can of jalapeno peppers (add spinach at this point, if desired). Spread into a 10 X 8 glass dish, greased or sprayed with baking spray. Sprinkle a little extra Parmesan on top. Bake until lightly brown around edges and middle, approximately 25 minutes. Serve with fresh cubed french bread, crackers, or tortilla chips.
