How to make it

  • Pour the milk over the oatmeal in a mixing bowl. Let stand for 5 mins.
  • In a seperate bowl, mix together the flour, baking powder, salt and sugar.
  • Stir the beaten eggs into the oatmeal mixture.
  • Add the dry ingredients, stir in the oil.
  • Coat the frying pan with non stick cooking spray, heat until a drop of water will bounce around the pan.
  • Spoon 1/4 cup of batter into the pan. Cook until the edges are full of broken bubbles, but before the center bubbles break, aboutr 2 or 3 mins.
  • Turn the pancakes over with a spatula.
  • Cook the second side until the edges are dry, about 1 to 2 minutes.
  • Sauce:
  • Combine butter, sugar and cinnamon in a skillet. Stir constantly!.
  • Add banana liquer and bananas and pecans.
  • Continue to cook until bananas begin to turn brown.
  • Add the rum, and ignite the pan to burn the alcohol away.
  • When the flames subside, spoon sauce over pancakes. Serve immediately.
