Comfort Curry Pakora

- chickpea flour (Besan) – 1/2 cup shopping list
- turmeric powder – 1/4 tsp shopping list
- red chili powder – to taste shopping list

- water – 1/4 cup shopping list
- baking soda – 1/4 tsp shopping list
- potato – 1 medium, diced shopping list
- Onion – 1/2 medium, diced shopping list
- cilantro – few sprigs, chopped shopping list
- oil – for deep frying shopping list
- For the Kadhi: shopping list
- Ingredients: shopping list
- plain yogurt – 2 cups shopping list
- water – 4 cups shopping list
- ginger – 2 tsp, minced shopping list
- garlic – 1 Tbsp, minced shopping list
- Dried Fenugreek Leaves (Methi) – 2 Tbsp (divided) shopping list

- coriander powder – 1 tsp shopping list
- garam masala – 1 tsp shopping list
- turmeric powder – 1/4 tsp shopping list
- cumin powder – 1/2 tsp shopping list
- For the seasoning: shopping list

- oil – 1 Tbsp shopping list
- cumin seeds – 1/2 tsp shopping list
- fenugreek seeds – 1/4 tsp shopping list
- Dried Whole red chilies – 2, broken shopping list
- Onion – 1 medium, sliced shopping list
- green chilies – to taste, slit shopping list
- Fenugreek Leaves – remaining from above shopping list
- salt – to taste shopping list
- water – 4 cups shopping list
- cilantro – few sprigs, chopped for garnishing shopping list

- gram flour 1 1/2 cups shopping list
- red chillis 1 tsp shopping list
- salt 1 tsp shopping list
- corriander seeds 1 tsp shopping list
- chat masala 1 tsp shopping list
- dried crused fengreek leaves 2 pinchs shopping list
- water enough to make a semi thick paste shopping list
- For curry: shopping list
- gram flour 6 tbsp shopping list
- water 1.15 litre shopping list
- curd 1/2 kg shopping list
- spring onions 3 shopping list
- bay leaves 12 shopping list
- ginger 1/2 tsp shopping list
- garlic 5 cloves shopping list
- green chillies 4 shopping list
- red chillies pwd 2 1/2 tsp shopping list
- salt 2 tsp or as per taste shopping list
- red chillies whole pods 4 shopping list
- Fried cummin pwder 1 tsp shopping list
- cummin 1tsp (for garnish) shopping list
- oil 1/2 cup shopping list
How to make it
- Method: (Heat Oil for Deep Frying)
- 1. In a medium bowl, mix together Chickpea Flour, Turmeric Powder, Red Chili Powder, Salt, Baking Soda and Water.
- 2. Mix well to form thick batter.
- 3. Add in Potatoes, Onions and Cilantro. Mix to coat evenly.
- 4. With your hand or a spoon, drop a small ball of the mixture into hot oil and deep fry until golden brown.
- 5. Remove Pakodas onto a plate lined with paper towels. Keep aside.
- Method:
- 1. In a medium bowl, mix together Yogurt, Ginger, Garlic, 1/3 of the Fenugreek Leaves, Chickpea Flour, Coriander Powder, Garam Masala, Turmeric Powder and Cumin Powder.
- 2. Add a small amount of water and blend with a hand blender until there are no more lumps
- Method:
- 1. Heat Oil in a pot.
- 2. Add Cumin Seeds and allow them to sizzle.
- 3. Add Fenugreek Seeds and Whole Red Chilies. Stir for few seconds.
- 4. Add Sliced Onions and Green Chilies. Saute until lightly brown.
- 5. Add remaining 2/3 of Fenugreek Leaves and stir for 30 seconds.
- 6. Add Yogurt mixture, Water and Salt. Mix well.
- 7. Bring Mixture to a rolling boil.
- 8. Add in Pakodas, mix, cover and cook for 10-15 minutes.
- 9. Garnish with Cilantro and serve hot with Rice or chapati.
- Recipe 2:
- Mix all ingredients well with enough amount of water to make a semi thick paste.Heat oil enough for deep frying in a deep frying pan. Put the paste in little amounts in the well heated oil with the help of a tbsp. Fry pakoras on medium heat. Mix baisin, water, curd, 6 Bay Leaves,spring onions,green chillies,garlic,ginger,cummin powder and red
- chillies pwd in a heavy based pot and cook on low heat untill it becomes half in quantity.The curry will turn a little thick.U can add water if U want to make it thin.Add the prepared pakoras and salt in the curry.
- For Tempering:
- Heat oil in a frying pan.Put cummins,red chilly pods and ay leaves.Fry well and put in the prepared curry.Your curry is ready to serve.Eat with boiled rice, Nan or as it is.You will love the delicious taste.
