Jamaican Chicken Jerk Style

- Jamaican Marinade: shopping list
- 1/4 cup peanut or olive oil shopping list
- 1/4 cup soy sauce shopping list
- 1/4 cup white vinegar shopping list
- splashes of fresh squeezed lime or lemon juice shopping list
- 3 garlic cloves crushed shopping list
- 1 med onion diced shopping list
- 2 bunches green onions chopped shopping list
- 3 Tbs. brown sugar shopping list
- 1/2 tsp EACH: shopping list
- fresh ground allspice - or fresh jarred shopping list
- fresh ground nutmeg - or fresh jarred shopping list
- ground ginger shopping list
- thyme shopping list
- salt to taste shopping list
- Coarse grated black pepper to taste shopping list
- shakes of bottled liquefied hot pepper sauce: shopping list
- such as habanero or Tabasco sauce ) shopping list
- OR if you really want hot and authentic: shopping list
- desired amount of fine minced Scotch Bonnet hot peppers shopping list
- Cut up chicken parts as desired even boneless ( 2 to 3 lbs ) shopping list
How to make it
- Combine marinade and puree or blend to make paste like.
- Place chicken parts with marinade in plastic zip lock bag
- Refrigerate 6 hours or overnight.
- Prepare chicken on the grill ( drain from marinade ) and cook till done on the grill
- Or one can bake/roast ( in some of the marinade ) at 350F oven uncovered, basting frequently until chicken is done and tender.
- Serve with Jamaican peas/beans and rice, or Jamaican steamed cabbage, or calaloo or fried plantains for an authentic meal
