How to make it

  • Combine marinade and puree or blend to make paste like.
  • Place chicken parts with marinade in plastic zip lock bag
  • Refrigerate 6 hours or overnight.
  • Prepare chicken on the grill ( drain from marinade ) and cook till done on the grill
  • Or one can bake/roast ( in some of the marinade ) at 350F oven uncovered, basting frequently until chicken is done and tender.
  • Serve with Jamaican peas/beans and rice, or Jamaican steamed cabbage, or calaloo or fried plantains for an authentic meal
