How to make it

  • cook soaked (from 1-24 hrs) beans. this can be done in 10 minutes with a pressure cooker or about 35 at a simmer. replacing water with stock as the cooking liquid enhances the flavor tremendously.
  • prepare sofrito- add lard or oil to pan over medium heat. add diced onions, garlic, and peppers. add bay leaves salt & pepper. cover and cook for 10 minutes.
  • add about 1 cup cooked beans to edge of sofrito pan. mash beans. add honey & wine.
  • add sofrito & mashed beans to bean pot. season with cumin & oregano. simmer on low for an hour, uncovered for last 20 minutes stirring occasionally.
  • cook rice in separate pot with coconut milk and cumin.
  • layer beans on rice and serve with lime wedge, sour cream, & diced pineapple.
