Carib-beans & Rice

- For the Beans: shopping list
- 1 lb. dry black beans shopping list
- *optional ham hock, bacon, or other pork shopping list
- 2 medium onions shopping list
- 2 medium sweet peppers shopping list
- 2 small hot peppers shopping list
- 4 cloves garlic shopping list
- 1/2 c lard or olive oil shopping list
- 2 bay leaves shopping list
- 2 TB oregano shopping list
- 1.5 TB toasted cumin seed shopping list
- salt and pepper to taste shopping list
- 3 TB honey shopping list
- 1 c dry red wine shopping list
- 3 TB wine vinegar shopping list
- 2 sliced limes shopping list
- *optional serve topped with diced pineapple & sour cream shopping list
- For the Rice: shopping list
- 1.5 basmati rice shopping list
- 3 c coconut milk shopping list
- 1 tsp ground cumin shopping list
How to make it
- cook soaked (from 1-24 hrs) beans. this can be done in 10 minutes with a pressure cooker or about 35 at a simmer. replacing water with stock as the cooking liquid enhances the flavor tremendously.
- prepare sofrito- add lard or oil to pan over medium heat. add diced onions, garlic, and peppers. add bay leaves salt & pepper. cover and cook for 10 minutes.
- add about 1 cup cooked beans to edge of sofrito pan. mash beans. add honey & wine.
- add sofrito & mashed beans to bean pot. season with cumin & oregano. simmer on low for an hour, uncovered for last 20 minutes stirring occasionally.
- cook rice in separate pot with coconut milk and cumin.
- layer beans on rice and serve with lime wedge, sour cream, & diced pineapple.
