Ethiopian Beef Stew

- 3 lbs stew meat cut into cubes shopping list
- 2 Tbs of oil shopping list
- 2 Tbs. clarified butter shopping list
- 1 onion small diced shopping list
- 2 cloves of garlic chopped shopping list
- 2 tsp of berbere ( see separate recipe i posted for this spice blend ) shopping list
- 2 Tbs tomato paste shopping list
- 1/2 tsp sugar shopping list
- 2 cups beef stock or as needed shopping list
- salt to taste shopping list
How to make it
- Saute onion in the oil and butter until soft
- Add the garlic and berbere spice, tomato paste, and sugar and cook and stir until thick
- Add some stock graduallyand stir to make a paste
- Add the remaining liquid and stir
- Add meat cubes and cook gently ( simmer ) until the meat is cooked and sauce thickened and reduced
- Season with salt
