How to make it

  • Preheat oven to 350 degrees F
  • Grease an 8x8 pan with vegan butter
  • Blend all dry ingredients into large bowl
  • Mix in wet ingredients into dry mixture until well combined
  • Pour batter into pan
  • Bake for 35 to 45 minutes
  • Cool and dust either powered sugar on top or a dollop of coconut milk whipped "cream" on top. (recipe below)
  • Coconut Milk Whipped Cream
  • 1 can of coconut milk (that's been in the refrigerator overnight (at least 8 hours)
  • 2 tablespoons of confectioners sugar
  • Do not shake the can of coconut milk
  • Skim coconut fat from the top until you reach the clear milky liquid (discard or save for something else)
  • In a stand mixer (I use my kitchenaid), blend on high until light and fluffy. It won't have the same consistency as traditional whipped cream but it's absolutely delicious!

    I have made similar and double the recipe for a 9 x13 pan. The hot coffee may be substituted for a soy, almond or coconut milk product for variation. Thanks for the nice post!
