Vegan Chocolate Cake

- 1 1/4 cup all-purpose flour shopping list
- 1 cup cane sugar shopping list
- 1/3 cup cocoa powder shopping list
- 1 teaspoon baking soda shopping list
- 1 cup hot coffee shopping list
- 1 teaspoon vanilla extract shopping list
- 1/3 cup vegetable oil or applesauce shopping list
- 1 teaspoon apple cider vinegar shopping list
How to make it
- Preheat oven to 350 degrees F
- Grease an 8x8 pan with vegan butter
- Blend all dry ingredients into large bowl
- Mix in wet ingredients into dry mixture until well combined
- Pour batter into pan
- Bake for 35 to 45 minutes
- Cool and dust either powered sugar on top or a dollop of coconut milk whipped "cream" on top. (recipe below)
- Coconut Milk Whipped Cream
- 1 can of coconut milk (that's been in the refrigerator overnight (at least 8 hours)
- 2 tablespoons of confectioners sugar
- Do not shake the can of coconut milk
- Skim coconut fat from the top until you reach the clear milky liquid (discard or save for something else)
- In a stand mixer (I use my kitchenaid), blend on high until light and fluffy. It won't have the same consistency as traditional whipped cream but it's absolutely delicious!
