' Leftover Turkey ' Stew

- 2 tb olive oil shopping list
- 1 onion, cut in 1/2 inch pieces shopping list
- 2 garlic cloves, minced shopping list
- 1 tb tomato paste shopping list
- 1 tb flour shopping list
- 1/2 cup red wine shopping list
- 2 cup turkey- or chicken broth shopping list
- 1/2 box fresh cranberries shopping list
- 1 bn spinach, washed and roughly chopped shopping list
- 2 tb heavy cream shopping list
- 1 can garbanzo beans, rinsed shopping list
- leftover turkey meat, as much, as you want, roughly chopped shopping list
- 1/2 bn parsley, minced shopping list
- s+p shopping list
How to make it
- Heat oil, saute onion for a couple minutes, until soft. Add garlic, saute 1 more minute. Stir in tomato paste and flour, roast for 2 min., stirring. Add wine, cook for some seconds, than add stock and cranberries. Bring to a boil and boil slowly for 5 min. stirring from time to time. Stir in spinach, cream and garbanzo beans, let spinach wilt. Add turkey meat and parsley, simmer, until heated through. Adjust seasonings and serve with mashed potatoes, pasta or stuffing with a salad on the side.
