How to make it

  • Heat oil, saute onion for a couple minutes, until soft. Add garlic, saute 1 more minute. Stir in tomato paste and flour, roast for 2 min., stirring. Add wine, cook for some seconds, than add stock and cranberries. Bring to a boil and boil slowly for 5 min. stirring from time to time. Stir in spinach, cream and garbanzo beans, let spinach wilt. Add turkey meat and parsley, simmer, until heated through. Adjust seasonings and serve with mashed potatoes, pasta or stuffing with a salad on the side.

    I also made a leftover turkey soup to, amazing how the recipe just keeps on transforming! I used zucchini, red bell peppers, red onion, sliced carrots, celery, garlic, leftover turkey meat, fresh chopped rosemary, cooked ditalini,salt and pepper- like you, we love leftover transformations!
