Quinoa Coconut Muffins

- 2 C spelt flour shopping list
- 3 tsp. baking powder shopping list
- 1/2 tsp. salt shopping list
- 1 can (400 ml) organic cococut milk shopping list
- 3-5 TBs. organic quinoa shopping list
- 2 TBs. organic syrup shopping list
- 1 organic egg shopping list
How to make it
- In one bowl, combine the first 3 dry ingredients and make a well in the middle.
- Over medium heat, combine the coconut milk, quinoa and maple syrup in a small saucepan, stirring constantly. After about 5-10 minutes, take off heat and let cool.
- When coconut mixture is cool enough to hold a finger into, quickly add and stir in egg..
- Dump wet mixture into dry, stirring until just combined.
- Fill into pre-greased muffins tins, 3/4 full.
- Bake at 200°C for about 15 minutes, or until golden brown.
