Fig Delights

- 4 handfuls rucola shopping list
- 4 ripe black or green figs shopping list
- 8 TBS soft mild goat cheese shopping list
- 4 tsp. honey (preferably wild honey) shopping list
- 4 tsp. Balsamico vinegar shopping list
- Scant handful toasted pine nuts shopping list
How to make it
- Spread a handful of rucola on each of 4 salad plates.
- Wash, dry, and split the figs carefully into sixths, cutting not quite through to the bottom so they spread out like a fan.
- Fill each fig with 2 TBS of the goat cheese.
- Drizzle each fig with 1 tsp. honey and 1 tsp. Balsamico.
- Sprinkle pine nuts over top and serve immediately, or keep chilled until serving (not longer than half an hour).
- Enjoy!
