How to make it

  • Spread a handful of rucola on each of 4 salad plates.
  • Wash, dry, and split the figs carefully into sixths, cutting not quite through to the bottom so they spread out like a fan.
  • Fill each fig with 2 TBS of the goat cheese.
  • Drizzle each fig with 1 tsp. honey and 1 tsp. Balsamico.
  • Sprinkle pine nuts over top and serve immediately, or keep chilled until serving (not longer than half an hour).
  • Enjoy!
