Ingredients
  • 3 Boneless, Skinless Chicken Breasts (diced)
  • 1 Tsbp Olive OIl
  • 5 Cloves Garlic
  • 1 Large Onion
  • 1 Carrot (Grated)
  • 1/4 C Red Wine
  • 1 6 oz can Tomato Paste
  • 1 15 oz can Tomato Sauce
  • 1 28 oz can Crushed Tomatoes
  • Dash Nutmeg
  • Dash Red Pepper Flakes
  • 1 Green Pepper
  • 1/8 Tsp Celery Salt
  • 1 Tbsp Parsley Flakes
  • 2 Bay Leaves
  • 1/4 C Grated Parmesan Cheese

Directions
  1. On Stove coat sauce pan with Olive Oil
  2. When hot add Garlic and Onion
  3. Sautee until onion is translucent
  4. Add chicken
  5. Let chicken brown slightly
  6. Add Green Pepper and Grated Carrot
  7. Add Red Wine and stir scraping the bottom of the pan
  8. Add all 3 cans of tomato products
  9. Season with Celery Salt, Pepper, Parsley, Red Pepper Flakes, & Bay Leaf
  10. Turn down heat and simmer 25 mins
  11. Stir in Cheese
  12. Serve over Pasta

I do this with ground poultry so I know you've shared a really delicious and satisfying sauce!


My wife and i tried this last night and it was really good. i personally would probably add a little more onion next time. but we used it with our homemade pasta that we had made for the first time. and it was superb.
