How to make it

  • Add Water to a 12 inch Dutch Oven and heat to a slow boil.
  • Add 5 lb roast to Dutch Oven and Cover.
  • Place Dutch Oven on top of 8 Charcoal Briquettes.
  • Place 16 Charcoal Briquettes on top of Lid.
  • Cook Roast for 25 Minutes.
  • remove Lid and turn Roast over-Cover
  • Cook for an additional 25 minutes.
  • Add Potatoes and Vegetables and seasonings-Cover
  • Cook for an additional 45 minutes to an hour.
  • Use a meat thermometer to assure Roast is thoroughly cooked.
  • Add flour or corn starch to thicken remaining water to your preference.
  • Add coals to top and bottom of Dutch Oven during the cooking process to keep a constant heat inside the oven.

    I did this at home with a little change... I made a rub for the roast and covered it with saran wrap in the fridge for 24 hours. I then after removing the saran wrap, I placed it in a crock-pot with 20oz beef broth, 20oz bottle of mt dew, a bottle of miller light beer, and about 1/3 cup apple flavored moonshine on high for 3 hours and on low for about 8 hours. I then took the roast out and placed it in a 200* oven for 4 hours as I put all the veggies in the juice of the crock-pot and turned them to high for about 4 hours till done.
    ---- The Family loved this and it was very filling. ----
