How to make it

  • Wash eggplant well.
  • cut into 3 even slices and split the slices again into 3, leaving you 9 stalks of eggplant.
  • Work quickly as they do discolor.
  • Wrap the bacon around the "stalks" and secure with a tooth pick.
  • Grill until eggplant is softened and the bacon is crisp.
