How to make it
- Fry the onion in butter, until golden. Let cool. Mash the potatoes. Mix all ingredients, until you have the consistency of meatloaf. Evtl. add some more breadcrumbs. Heat butter in a large pan and fry the meatballs on both sides, until gold brown. Put on a baking pan and finish in a 350 F oven for 10 min.
- Discard fat in pan, melt 1 tb fresh butter. Wisk in flour and cook for a minute. Slowly add stock and half-and-half and cook for a couple minutes. If the sauce gets too thick, thin with a little milk. Adjust seasonings.
- Serve meatballs with plenty of sauce, mashed or boiled potatoes and Lingonberry jam or cranberry sauce.
- Note : For great bread crumbs, rip fresh or day old baguette in large chunks, drizzle with a little olive oil and bake to a golden brown in a 400 F oven, 10 - 15 min. Let cool, try not to eat too much of the fresh roasted bread and process in a mixer to fine breadcrumbs
