This is SO comforting, delicious, easy and quick - I went looking for a satisfying soup I could make with stuff I already had in the house, because it's been so cold in the NE USA this week, and this was just perfect. Only change I made was to use a dried shiitake mushroom, which I already had, instead of a button mushroom, because I was too lazy and warm to go outside. Adore this recipe, will make it again and again!
