Stuffed Fish Filets With Nutmeg Sauce Recipe

Ingredients
  • 2 Tbsp Butter
  • 1 Green Onion, chopped
  • 1/3 cup Grated Carrots
  • 1/2 cup cooked Rice
  • 1 isp grated Lemon Rind
  • 1 tsp Nutmeg
  • 1/4 tsp Black Pepper
  • 1/8 tsp Salt
  • 1 tsp Lemon Juice
  • 4 small white fish filets (flounder, sole, etc)
  • 4 tsp Flour
  • 3/4 cup Chicken Broth
  • 1/8 tsp Black Pepper
  • 1/4 Dry White Wine
  • 1 Tbsp Parsley

Directions
  1. Preheat oven to 350.
  2. In a heavy skillet melt half the butter.
  3. Add green onion and carrots, cooking until tender.
  4. Stir in rice and half each of the following :lemon juice, lemon rind, nutmeg, and black pepper.
  5. Add the salt.
  6. Rub the filets with the remaining pepper..
  7. Place 1/4 of the rice mixture on half of one of the filets.
  8. Fold the half over and stick with a toothpick to hold.
  9. Bake fish in a 8 x 8 x 2 lightly greased baking dish for 25-30 minutes.
  10. Nutmeg Sauce:
  11. Melt remaining butter in a saucepan.
  12. Stir in flour and cook together for 3 to 5 Minutes.
  13. Add chicken and remaining nutmeg, lemon rind and juice, and white or black pepper.
  14. Cook stirring constantly until thickened and smooth.
  15. Add the wine and parsley.
  16. Serve the sauce with the fish.
