How to make it

  • French Fries
  • Ingredients:
  • 6 large baking potatoes, cut into strips
  • Oil for deep frying
  • Salt
  • How to make french fries:
  • • Cut the potatoes into strips of about 1/3 to 1/2-inch thickness and width
  • • Soak potatoes in ice cold water for 1 hour at room temperature. Drain well; pat dry with paper towels.
  • • Heat oil in deep fryer to about 375°.
  • • Place potato strips in a single layer in deep fry basket; fry in hot oil for about 4 minutes, or until golden brown and tender.
  • • Drain the homemade french fries on paper towels then keep warm in the oven while frying remaining batches.
  • Masoor Ki Daal (Kali)
  • Ingredients:
  • 1. Kali masoor ki daal (black lentils) – ½ kg (soaked for 1 hour)
  • 2. Turmeric powder – ½ tsp
  • 3. Ginger garlic powder – 2 tsp
  • 4. Salt – ½ tsp
  • 5. Coriander powder – 1 tsp
  • 6. Red chili powder – 1 tsp
  • 7. Raw mango or tamarind pulp – 1 tbsp
  • 8. Garam masala powder – 1 tsp
  • Method:
  • Take a pan, add soaked and washed daal, turmeric powder, ginger garlic paste, red chili, salt, coriander powder and water, cook until daal is tender. Then add raw mango or turmeric pulp, garam masala powder and little bit of water and cook for few more minutes. When its done pour bighaar and serve with boil rice or zeera (cumin seeds) rice.
  • Ingredients for bighaar:
  • 1. Ghee or oil – ½ cup
  • 2. Cumin seeds – 1 tbsp
  • 3. Chopped garlic – 2 tbsp
  • 4. Dry whole red chilies – 10
  • Method:
  • Take a frying pan, heat up oil or ghee and fry chopped garlic, red chilies and cumin seeds until light brown, pour on daal and serve.
  • Chicken Manchurian Recipe
  • Chicken Manchurian is one of the most popular recipes of Chinese Cuisine but lovingly desired in almost every region.
  • Ingredients to Marinate the Chicken:
  • • Boneless Chicken: 500 gm
  • • Garlic paste: 1tsp
  • • Egg : 1
  • • Flour 1tsp
  • • Oil 1tsp
  • • Salt & pepper as per taste
  • Cut the boneless Chicken in Cubes and mix all the above ingredients. Marinate it for one hour. Deep fry the above marinated chicken and keep it in a side until you ready the Chicken Manchurian sauce.
  • Ingredients for Chicken Manchurian Gravy Sauce:
  • • Chopped Garlic: 4tbsp
  • • Cooking Oil: 4 tbsp
  • • Ketchup: 5tbsp
  • • Capsicum: ½ cup
  • • Pineapple: ½ cup
  • • Spring Onion: 1
  • • Worcester sauce: 2tbsp
  • • Oyster sauce: 2tbsp
  • • Corn flour: 2tbsp
  • • Black pepper & salt as per taste
  • • Water: 1 cup
  • Directions to Make Chicken Manchurian:
  • Sauté fry the chopped garlic cloves in 4 tbsp of oil. Add the capsicum, spring onion and sauté for 1 minute. Then add pineapple and fried chicken and sauté again. Put the ketchup and sauces. Then add water. Cook it for 4 to 5 minutes. Dissolve the corn flour in ¼ cup of water. Then add corn flour mixture in it to make the gravy thick.
  • Easy to cook Chinese Chicken Manchurian is ready. Serve it with egg fried rice and enjoy
  • Dhaba Chicken Karahi
  • Ingredients:
  • Chicken – 1 ½ kg
  • Oil or ghee – ½ kg
  • Tomatoes – 1 kg
  • Ginger – 50g
  • Lemon juice – 1 tbsp
  • Salt – to taste
  • Ginger garlic water – 5 tbsp
  • Green chillies – 4
  • Cumin seeds – 1 tsp (fried and grounded)
  • Dry coriander seeds – (fried and grounded)
  • Crushed black pepper – 1 tsp
  • Crushed red chillies – 1 tbsp
  • Method:
  • Take a pan and put oil, fry chicken in this oil until turns a reddish colour. Take a wok and put chopped tomatoes with little bit of water and cook until tomato cooks well. When tomatoes are done, put fried chicken along crushed red chillies, salt and ginger garlic water (take a bowl and put roughly chopped ginger garlic and water, and use this water) and fry well.
  • Now add green chillies, black pepper, ginger flakes, fried masala (cumin seeds and coriander seeds) and some oil (which we used to fry chicken) and fry well. Then add lemon juice and cook in steam for 5 minutes on very low heat.
  • Chicken Black Pepper Karahi
  • Ingredients:
  • Chicken – ½ kg
  • Onion – 1 medium
  • Oil – ¼ cup
  • Fresh coriander – ¼ bunches
  • Green chillies – 6 chopped
  • Cumin seeds – 1 tbsp (crushed)
  • Dry coriander – 1 tbsp (crushed)
  • Freshly ground black pepper – 1 ½ tbsp
  • Salt – to taste
  • Ginger garlic paste – 2 tbsp
  • Yogurt – 250g
  • Ginger flaks – 2 tbsp
  • Method:
  • Take a wok, put oil and onion and fry until the colour changes to brown. Then put ginger garlic paste and fry a bit, then add chicken and fry until the chicken’s colour changes to white, then add chopped green chillies and 2 tbsp fresh coriander and mix it well, then put crushed cumin and crushed dry coriander and fry until the chicken’s colour changes to golden.
  • Then add yogurt and fry until the yogurt’s water dries. Then put black pepper, ginger flakes and salt and mix well. Then serve with fresh coriander and ginger flakes.
  • How to Cook Dhaba Style Daal, English / Urdu Recipe
  • Dhaba Style Daal
  • Ingredients:
  • 200 gm split urad dal
  • 75 gm channa dal
  • 2 tbsp chopped ginger
  • 2 tbsp chopped garlic
  • 4 tbsp ghee/ oil
  • 3 chopped onions
  • 6 chopped green chillies
  • 2 chopped tomatoes
  • 1 tbsp mint leaves chopped
  • 1 tbsp chopped coriander
  • 1/2 tsp red chilli powder
  • 1 tbsp Butter
  • 2 tablespoon Garam Masala
  • Method:
  • Dhaba is a road side restaurant, which are famous for their quick and delicious food along the road sides, Dhabas are used by travellers and truckies en route.. Dhabas has some distinct flavours and are famous for their Daal.
  • Soak lentils in water for 1 hour. Drain. Heat a litre of water. Add lentils, 1 tbsp ginger paste , 1 tbsp garlic paste and 1 tbsp Ghee. Cover and cook until soft. Mash the lentils against the side of the pan. Heat ghee in a frying pan. Add onions and fry until colored. Add the red chilli powder and stir. Add remaining ginger and garlic. Fry for two minutes. Stir in chopped green chillies and tomatoes Pour over lentils. Put it on slow heat and let it cook for 5 minutes. Serve it with Naan, Rice or Roti Add some Butter while serving
  • TIP: To cook Dhaba style daal, the when you put Garam Masala, let it get overcooked ( burnt) slightly. This gives the usual Dhaba Style Flavour.
  • Yummy Kofta Korma
  • Ingredients:
  • Mince – 1kg
  • Green Chillies – 4
  • Onion – 1
  • Red Chilli Powder – 1 tsp
  • Salt – ¾ tsp
  • Fried gram peas – 2 tbsp
  • Nutmeg powder – ¼ tsp
  • Mace powder – ¼ tsp
  • Water – 2 tbsp
  • Fried ground poppy seeds – 2 tbsp
  • Garam Masala Powder – 1 tsp
  • Fresh coriander – ½ bunches
  • Ginger garlic paste – 2 tbsp
  • Green cardamom powder – ¼ tsp
  • Bread slices – 2
  • Method:
  • Put all ingredients along with mince in grinder, and let them grind until it becomes smooth paste, and then make mince balls. Make gravy and cook these mince balls with gravy. You can freeze them as well.
  • Ingredients for gravy:
  • Onion – 1 big size
  • Cooking Oil – 1 cup
  • Salt – to taste
  • Green cardamoms – 5
  • Cloves – 5
  • Ginger Garlic Paste – 1 tbsp
  • Red chilli powder – 1 tsp
  • Degi mirch – 1 tsp
  • Coriander powder – 1 tbsp
  • Yogurt – ¾ cup
  • Kewra water – 1 tbsp
  • Nutmeg, mace powder – ¼ tsp
  • Ginger flaks – 2 tbsp
  • Garam masala powder – 1 tsp
  • Method:
  • Take a pan and fry onion in oil, until golden brown, take them out from the oil and in same oil add cardamoms and cloves, when starts to splitter add ginger garlic paste with 1 tbsp of water. Then add red crushed chillies, salt, degi mirch, coriander powder and yogurt, mix and fry well. Then add fried crushed onion and fry for few seconds, now add mince balls, after 1 minute add water, ginger flaks, nutmeg powder, mace powder, kewra and garam masala. Cover and cook on low heat until it’s done. When it’s cooked, serve with boiled eggs. Do try this very yummy Kofta Korma.
  • QEEMA MATAR
  • Ingredients:
  • Mince (hand chopped) ½ kg
  • Peas 2 cup
  • Onion (chopped) 2
  • Red chili powder 1 tbsp
  • Turmeric powder 1 tsp
  • Salt to taste
  • Ginger garlic paste 1 tbsp
  • Green chilies 4
  • Green coriander 1 bunch
  • Oil 1 cup
  • Method:
  • Take 1 cup oil in the pan and add 2 chopped onion. Fry it till golden brown. Add in 1 tbsp ginger garlic paste, 1tsp turmeric and 1 tbsp red chili powder. Cook it and then add in 1/2 kg mince in it. Add in 2 cup peas, 4 green chilies. Cook it for further 5 minutes. Add in salt and simmer. Garnish it with chopped coriander leaves and serve.
  • Fry Keema (Mince)
  • Ingredients:
  • Beef or mutton mince –
  • Tomatoes – 3
  • Onion – 1 chopped
  • Garam masala powder – 1 tsp
  • Salt – to taste
  • Dry coriander (fried and grounded) – 1 tbsp
  • White cumin seeds (fried and grounded) – 1 tbsp
  • Turmeric powder – ½ tsp
  • Red chilli powder – 1 ½ tsp
  • Ginger garlic paste – 1 ½ tbsp
  • Oil – ½ cup
  • Ginger flakes – as required
  • Green chillies and fresh coriander – as required
  • Method:
  • Take a pan or wok, put oil and heat it up. Now add chopped onion and fry until light brown, and then add ginger garlic paste and fry. Then ad salt, red chilli powder, turmeric powder and chopped tomatoes and fry well. Now add fried cumin seeds and dry coriander along with mince and cook well. Then add water and cover and let it cook till mince is done and the water dries. Then add garam masala powder and mix well and garnish with ginger flakes, green chillies and fresh coriander. Serve with tandoori paratha.
