Marinated Summer Quail Recipe
This easy-to-prepare dish combines the zest of ginger, garlic, and soy sauce with the rich flavor of good quail

Ingredients
  • 4-6 free-flight boneless quail (I get mine at www.dartagnan.com)
  • 4 tablespoons of low-salt soy sauce
  • 3 tablespoons of fresh ground ginger
  • 1 tablespoon of fresh minced garlic
  • 1/2 cup rice or light white wine

Directions
  1. Marinate quail at least three hours before ready to serve.
  2. Prepare marinade by combining rice/white wine, soy sauce, ginger, and garlic in large, wide bowl. Put quail in bowl, making sure both sides of each are wll coated and submerged.
  3. Preheat grill, making sure it "spits."
  4. Place quail, breast side down on grill. Cook 10-12 minutes each side, turning just once. Once cooked, let rest for several minutes. Serve hot, with fresh salad of mesclun greens or spinach.
