How to make it

  • Marinate quail at least three hours before ready to serve.
  • Prepare marinade by combining rice/white wine, soy sauce, ginger, and garlic in large, wide bowl. Put quail in bowl, making sure both sides of each are wll coated and submerged.
  • Preheat grill, making sure it "spits."
  • Place quail, breast side down on grill. Cook 10-12 minutes each side, turning just once. Once cooked, let rest for several minutes. Serve hot, with fresh salad of mesclun greens or spinach.
