Marinated Summer Quail

- 4-6 free-flight boneless quail (I get mine at www.dartagnan.com) shopping list
- 4 tablespoons of low-salt soy sauce shopping list
- 3 tablespoons of fresh ground ginger shopping list
- 1 tablespoon of fresh minced garlic shopping list
- 1/2 cup rice or light white wine shopping list
How to make it
- Marinate quail at least three hours before ready to serve.
- Prepare marinade by combining rice/white wine, soy sauce, ginger, and garlic in large, wide bowl. Put quail in bowl, making sure both sides of each are wll coated and submerged.
- Preheat grill, making sure it "spits."
- Place quail, breast side down on grill. Cook 10-12 minutes each side, turning just once. Once cooked, let rest for several minutes. Serve hot, with fresh salad of mesclun greens or spinach.
