How to make it

  • Grease and line with paper, 2 loaf pans ( batter should fill each pan a bit over 1/2 full )
  • Combine first 6 ingredients by hand or with a mixer at low speed
  • batter will be very thick
  • Fold in the remaining ingredients by hand with a mixing spoon
  • Batter will loosen up
  • Divide into the 2 loaf pans
  • Bake in a 350F oven about one hour or tested done in center
  • Tent loaves with foil if browning to fast
  • Cool in pans at least 20 minutes before removing from pans to cool completely or cake will collapse upon itself so don't skip this step!
  • Wrap and refrigerate loaves
  • Freezes well
  • Note: make bake in layers and baking time will be altered
