Hummingbird Loaves

- 3 cups flour shopping list
- 2 cups sugar shopping list
- 1 tsp salt shopping list
- 1 tsp baking soda shopping list
- 1 tsp baking powder shopping list
- 3 tsp cinnamon ( yes ) shopping list
- 1 1/2 cups oil shopping list
- 2 tsp vanilla shopping list
- 3 eggs shopping list
- 1, 8 oz can crushed pineapple undrained- ( I used fresh chopped pineapple in this recipe ) shopping list
- 2 cups small diced bananas shopping list
- 1 cup chopped pecans or walnuts ( or coconut or maraschino cherries or chocolate chips ) shopping list
How to make it
- Grease and line with paper, 2 loaf pans ( batter should fill each pan a bit over 1/2 full )
- Combine first 6 ingredients by hand or with a mixer at low speed
- batter will be very thick
- Fold in the remaining ingredients by hand with a mixing spoon
- Batter will loosen up
- Divide into the 2 loaf pans
- Bake in a 350F oven about one hour or tested done in center
- Tent loaves with foil if browning to fast
- Cool in pans at least 20 minutes before removing from pans to cool completely or cake will collapse upon itself so don't skip this step!
- Wrap and refrigerate loaves
- Freezes well
- Note: make bake in layers and baking time will be altered
