How to make it

  • Grease and flour a large 10 x 14 or large 9 x 13 pan,or a large bundt pan, or 12 jumbo muffin tins or 2, 9 inch square pans or a 10 inch spring form pan
  • Cream butter and sugar fluffy
  • Add and beat in eggs and flavor extract
  • Combine the flour, baking powder, baking soda and salt
  • Add to the creamed mixture alternately with the buttermilk
  • Batter will be very thick
  • Fold in the berries, batter will loosen up.
  • Spread mixture evenly into pan(s) of choice.
  • In the oblong pan, batter may fill over halfway
  • Make streusal by cutting butter into combined flour, sugar and spices
  • Sprinkle streusal evenly over the batter
  • Bake in a preheated 350 F oven, approx. 1 hour for 9 x 13 pan OR tested done in center with wooden toothpick, baking times will be different for other pan sizes
  • Cool cake on rack completely
  • Freezes well
  • Note: allow cake to mellow overnight before serving for best flavor.
  • A moist, mellow, lovely blueberry cake!

    Midgelet is right, right, right! This is awesome! I've been blessed/cursed with blueberry bushes that are very prolific! I use vanilla extract & 3c berries; no cinnamon (but I'm sure it's good) in the streusel.
