Father was given this recipe by a friend. I really love the flavors that it brings. Ole!

Ingredients
  • 1 to 1 1/2 boneless chicken thighs
  • 1 medium onion, chopped
  • 1 7oz can chopped green chilis
  • 1 bag tortilla chips
  • 1 2 cup bag shredded cheddar
  • 1 Can cream of chicken soup

Directions
  1. Preheat oven to 350.
  2. Saute chopped onion until soft.
  3. Add green chilis and cream of chicken soup with one can of water.
  4. Heat until boiling, then add chicken, cut into bite sized pieces.
  5. Simmer until chicken is cooked (about 20 minutes).
  6. In a 9 x 9 square pan, layer 1/2 the chips, 1/2 chicken and sauce mix, and 1/2 the cheese.
  7. Layer remaining chips and the chicken mix.
  8. Top with remaining cheese.
  9. Bake for 30 minutes and enjoy!
