Beet And Feta Cheese Salad

A medley of Mediterranean flavors make this fresh beet and feta ( or even goat cheese ) salad very delicious indeed. The beet and cheese combination is wonderful together and the beets add some sweetness to the salad, the cheese a some richness, spiked with a bit of mint and mustard.
Ingredients
- 2 to 3 large fresh beets cooked, peeled and diced shopping list
- 1 cup feta or goat cheese, crumbled shopping list
- 1 cup pitted black olives chopped ( canned or oil cured ) shopping list
- 2 Tbs olive oil shopping list
- 1 Tbs coarse grain mustard shopping list
- 1 Tbs snipped fresh chives shopping list
- 1 Tbs fresh chopped mint shopping list
- a splash or red wine vinegar or fresh lemon juice totaste shopping list
- salt if needed and fresh black pepper to taste shopping list
How to make it
- Gently mix all ingrdients together.
- Chill well or serve when freshly made
