Beet Tzatziki

Here is a delicious version of the Greek cucumber condiment/side salad only using beets along with the cucumber. No photo as most of the beet salads are vivid pink anyway. Do try using fresh summer beets! Delicious made even without addition of cucumber.
Ingredients
- 2 large fresh beets, cooked, peeled and diced or thin sliced shopping list
- 1 small-medium garden frersh cucumber, unpeeled, seeded and diced or thinly sliced shopping list
- 1 cup Greek yoghurt or sour cream as needed shopping list
- 1 large garlic clove minced or to taste shopping list
- 1 Tbs fresh minced mint leaves or to taste ( try chopped dill instead of mint also ) shopping list
- salt and pepper to taste shopping list
How to make it
- Simply mix all adding ingredients to taste,
- Chill well
- Note: this may be made just using beets alone without any cucumber if desired
