Smothered Pork Chops

- 4 thick center cut pork chops shopping list
- 8 oz. white mushrooms, thickly sliced shopping list
- 1 shallot, thinly sliced shopping list
- approximately 1 cup red wine ( I used Yellow tail Cabernet Sauvignon) shopping list
- 4 slices of thinly sliced provolone cheese shopping list
- salt and pepper to taste shopping list
- 1 Tb. butter shopping list
- paprika to taste shopping list
How to make it
- Preheat the oven to 350
- Place the pork chops on a baking sheet and sprinkle with salt, pepper and paprika on both sides.
- Bake at 350 for 30 minutes, or until the internal temperature reads 170
- While the chops are baking, melt the butter in a medium skillet.
- Add mushrooms, shallots, salt and pepper to the pan, and saute until the mushrooms are soft but not too soft.
- Add the wine and reduce until all of the wine has been absorbed by the mushrooms.
- Remove from heat.
- Once the pork chops are cooked through, top them with the mushrooms and then a slice of Provolone cheese.
- Place them under the broiler until the cheese is melted and slightly golden (about 1-2 minutes).
- Enjoy!
