Red Cabbage Slaw

- 1 small head of red cabbage to equal 4 cups shredded/sliced for coleslaw shopping list
- salt shopping list
- 2 Tbs vinegar shopping list
- 4 cups boiling water shopping list
- 1 large peeled sweet apple shredded shopping list
- a bit of grated sweet onion shopping list
- Dressing shopping list
- 3 Tbs oil ( any kind you wish ) shopping list
- 3 Tbs fresh lemon juice shopping list
- Additional sweetener of choice ( sugar, honey, etc ) shopping list
- salt and pepper to taste shopping list
How to make it
- Place shredded cabbage in a bowl
- Sprinkle with a small amount of salt and the vinegar
- Pour on boiling water ( amt of water to always equal amount of cabbage in bowl )
- Mix and let sit 5 minutes
- Drain well, do not rinse
- Add the oil, grated apple,onion and fresh lemon juice to taste
- Sweeten as desired
- Season with salt and pepper to taste
- Chill very well before serving, at least several hours
- Stir before serving and readjust seasoning if needed
- Note: if making a larger amount always use the same oil and lemon juice ratio
- Also feel free to add whatever else you like to this slaw for variations.
