Hot Cheesy Roasted Bussels Sprout Dip

- 1 pound Brussels sprouts, trimmed and quartered shopping list
- 1 tablespoon olive oil shopping list
- salt and pepper to taste shopping list
- 2 cloves garlic, unpeeled shopping list
- 1/2 teaspoon thyme, chopped shopping list
- 4 ounces cream cheese, room temperature shopping list
- 1/4 cup sour cream shopping list
- 1/4 cup mayonnaise shopping list
- 3/4 cup mozzarella, shredded shopping list
- 1/4 cup parmigiano-reggiano (parmesan), grated shopping list
- salt and pepper to taste shopping list
How to make it
- Toss the brussels sprouts in the olive oil, salt and pepper, spread them out in a single layer on a baking sheet along with the cloves of garlic and roast in a preheated 400F oven until golden brown, about 20-30 minutes, flipping half way through.
- Squeeze the roasted garlic from the skins, mix everything, place in a baking dish and bake in a preheated 350F oven until lightly golden brown on top and bubbling on the sides, about 15-20 minutes.
