Pasta With Caramelized Onions
From champagnetime 11 years agoIngredients
- 2 tablespoons butter shopping list
- 2 tablespoons olive oil shopping list
- 2 to 3 large sweet onions, sliced (about 3 to 4 cups) shopping list
- 2 tablespoons balsamic vinegar shopping list
- 1 lb. linguine or favorite pasta shopping list
- Shaved parmesan cheese for garnish shopping list
How to make it
- Cook the onions in the butter and olive oil in a large skillet over low heat until caramelized, 25 to 30 minutes. You’re looking for a golden color to the onions. If they start to brown too much, add a little water to the pan and continue cooking.
- Cook pasta according to pkg. directions; drain, holding back 1/2 cup of the pasta cooking water. Transfer to the skillet with the onions after they are caramelized. With tongs toss the pasta and onions together; drizzle the balsamic over and continue combining.
- If the dish looks a little dry, add pasta cooking water a little at a time until desired consistency. Serve topped with the cheese.
