Maltese Spice Cake

- ¼ cup camelina (or canola) oil shopping list
- ½ cup orange or peach jam (I used jelly.html">Creamsicle jelly) shopping list
- 1 tbsp vanilla extract shopping list
- ¾ cup unsweetened vanilla almond milk shopping list
- 2 tbsp apple cider vinegar shopping list
- 1 cup flour shopping list
- ¾ cup spelt flour shopping list
- ½ cup sugar shopping list
- ½ tsp baking soda shopping list
- ½ tsp salt shopping list
- 1 tsp cinnamon shopping list
- ¼ tsp allspice shopping list
- ½ tsp nutmeg shopping list
- ½ tsp cardamom shopping list
- 1 cup raisins (I used “cherry” or “crimson” raisins - http://www.nuts.com/driedfruit/raisins/crimson.html) shopping list
How to make it
- Preheat oven to 375F and grease a 9x5” pan.
- Mix the oil, jam, vanilla, almond milk, and vinegar in a bowl until well blended.
- Add flours, sugar, baking soda, salt, cinnamon, allspice, nutmeg and cardamom.
- Stir to just combine, then mix in the raisins.
- Bake 45-55 minutes, or until tests done.
