Pecan Pie

- Unlike a typical pecan pie, my neighbor Jane’s version is crunchy and chewy, almost closer to a brittle. And it’s one of the best things I’ve ever eaten. shopping list
- 3 eggs shopping list
- 2/3 cup sugar shopping list
- 1/3 cup light Karo syrup shopping list
- 1/3 cup dark Karo syrup shopping list
- 2 tablespoons butter, melted shopping list
- 1 teaspoon vanilla shopping list
- 2 1/2 cups whole pecans (or half or quarter pieces, but not the chopped kind) shopping list
- 9-inch deep-dish pie crust shopping list
How to make it
- Preheat oven to 375 degrees. Beat eggs, then stir in sugar, light and dark syrups, butter, and vanilla. Mix well. Add 2 cups pecans and mix well again. Pour mixture into crust. Take a look at the mixture; you will see gaps with no pecans. Use as many of the remaining pecans to fill these gaps as needed. Bake for about an hour. Allow to cool. Serves 6 to 8.
