Almost Downton Abbey Mincemeat

- 1 cup raisins shopping list
- ½ cup craisins shopping list
- 8 dried figs, quartered shopping list
- 10 prunes, quartered shopping list
- 1 lb red seedless grapes, chopped shopping list
- 6 large apples, peeled and diced shopping list
- 2 oz dry TVP granules (optional, adds texture) shopping list
- 1 tsp cinnamon shopping list
- 1 tsp fresh ginger shopping list
- ½ tsp nutmeg shopping list
- ½ tsp allspice shopping list
- pinch salt shopping list
- juice and zest of 2 oranges shopping list
- ½ cup sugar shopping list
- ¼ cup brown sugar shopping list
- 3 tbsp molasses shopping list
- 1 cup spiced rum, divided shopping list
How to make it
- Combine fruit, TVP, spices, orange juice and zest, sugars, molasses and half the rum in a large pot. Bring to a brisk simmer, then cover and reduce heat to low.
- Cook, covered and stirring occasionally, for 3 hours.
- Uncover and cook 45 minutes more, until thick and reduced.
- Remove from heat and stir in remaining rum.
- Store in the fridge up to 1 month or freeze up to 1 year.
