Kaleslaw Salad

Janet and Greta Podleski 's Looneyspoons Low-fat Cookbook is full of wonderful recipes and a comic-strip format for laughs. I signed up for their newsletter and got this Kaleslaw recipe last month. I served it at Christmas with Mexican food, and today made it for DH. Read more He even likes it! I cut the recipe in half. Also, the original recipe uses regular fresh kale.: Remove the ribs, and slice into bite sizes. When ready to serve, add 1/3 of the dressing to the kale in the salad bowl and massage the leaves for 5 minutes. See less
Ingredients
- apple cider vinaigrette shopping list
- 1/3 cup olive oil shopping list
- 3 T. apple cider vinegar shopping list
- 2 T. lemon juice shopping list
- 2 T. orange juice shopping list
- 2 T. Dijon mustard shopping list
- 2 T. maple syrup shopping list
- The Salad shopping list
- 4 cups kale (I have found baby kale in the stores lately) shopping list
- 2 cups red cabbage, chopped shopping list
- 2 cups carrots, grated shopping list
- 1 cup dried cranberries shopping list
- 3/4 cup pumpkin seeds (pepitas) shopping list
- 1/2 cup scallions, sliced shopping list
- (1/3 cup chopped fresh parsley) shopping list
How to make it
- Combine all the dressing ingredients and set aside. (make a day before serving)
- Toss all the salad ingredients together , Pour on dressing to taste.
