Anti-antipasto Pasta

- 8 oz. pasta shopping list
- 2 tbsp. butter shopping list
- 1 tbsp olive oil shopping list
- 2 cloves garlic, finely minced or grated shopping list
- 1/2 cup chopped sliced ham shopping list
- 1/2 cup chopped sliced salami shopping list
- 1 10 oz package frozen peas, thawed shopping list
- ¼ cup diced roasted red pepper (about ½ large pepper) shopping list
- ¼ cup sliced or chopped olives shopping list
- 1/2 cup grated parmesan shopping list
- 1/4 cup grated asiago shopping list
- salt & pepper shopping list
- 1 tsp italian seasoning shopping list
- 1 Tbsp chopped fresh basil shopping list
- Additional parmesan and olive oil for serving. shopping list
How to make it
- Cook pasta according to package directions. Drain and while pasta is still in colander, melt butter in pan with olive oil over medium heat; Add garlic and sauté gently until butter/oil mixture is fragrant. Add strained pasta back to pan and toss to coat with melted butter
- Stir in ham, salami. Peas, roasted peppers and olives. Add cheeses and seasonings and stir to coat.
- Garnish with additional parmesan and a drizzle of olive oil
